Summer Kaiseki Menu starts June 1st 2024

In early summer, our Japanese kaiseki menu changes to a summer look.
It is the season to enjoy the contrast mountain vegetables fresh green buds with the bright white smoke in Jigokudani(Hell Valley).

In this column, we would like to introduce our recommended dishes from “Summer Japanese Kaiseki menu” which will go on sale on June 1.

Summer prologue: Corn tofu, daggertooth pike conger, shrimp with Okura paste – Served with all meals
Corn that has been bathed in sunlight and stored its sweetness is carefully strained to make starchy tofu.
Please enjoy it with pike with ume plum paste, Shrimp, Salmon roe, and Jade colored broth soup stock.
This is a cool dish filled with the delicacies of summer.

 


Tempura assort: Flounder with sea urchin dough, tomato and asparagus – Served with Deluxe Kaiseki Dinner, only at Kaiseki restaurant Yunosato
Soft and fluffy flounder is coated with a rich flavorful sea urchin paste, wrapped by a black sesame and deep-fried. A small amount of salt enhances the flavor.
Tomatoes and fresh green asparagus tempura are served on the side. Delivered from our open kitchen.

 


Hokkaido octopus steamed rice – Served with Special Kaiseki Dinner & Deluxe Kaiseki Dinner
Hokkaido octopus, which is also delicious as sashimi, is served with steamed rice. It is cooked with Nanatsuboshi rice, a Hokkaido specialty.
Enjoy harmony with edamame. Steam the rice for about 10 minutes before serving.

 


Summer hors d’oeuvres – Served with Deluxe Kaiseki Dinner, Exclusive Kaiseki Dinner & Crab Kaiseki Dinner
Shigure beef (simmered sweet and spicy seasoned beef) and Hokkaido whelk’s crunchy texture are a treat for those who wish for good health and relief from the heat.

 


Grilled rosy seabass with sea urchin – Served with Exclusive Kaiseki Dinner In-room dining only.
Seasonal fatty rosy seabass is coated with a richly flavored sea urchin paste and grilled.
The fragrance of the green magnolia leaves adds a summery flavor to this dish.

 

“Summer Japanese Kaiseki menu” is available from June 1 through August 31.
We also offer seven other types of set meals, including a crab set meal in which you can enjoy crab to the fullest.
