Introducing the 2024 Winter Kaiseki Menu

Though the snow has yet to blanket Noboribetsu Onsen, the frost on the bare trees marks the arrival of winter. It’s that time of year when we can truly feel the season’s change. During this early winter period, our traditional Japanese kaiseki menu also takes on a winter-inspired transformation.

We’re excited to introduce some of the standout dishes from our Winter Kaiseki Menu, available from December 1st.


Winter hors d’oeuvres – Served with Special Kaiseki Dinner
Enjoy grilled tofu made from turnips grown in nutrient-rich red soil, melt-in-your-mouth Hokkaido roast beef with delicate marbling, with a refreshing kumquat and chewy squid salad that captures the flavors of the cold season. These dishes provide the perfect start to a meal full of seasonal ingredients.


Grilled miso paste rockfish assorted Daikoku Shimeji mushroom, Ginkgo – Served with Exclusive Kaiseki Dinner & Crab Kaiseki Dinner
This dish is another true winter highlight. Served with steamed sea urchin, Daikoku mushrooms, and a generous portion of tender, fatty rockfish, it is beautifully arranged on a bed of winter daikon. The fish is grilled with miso, creating a warm and satisfying dish perfect for the season.


Tokachi Beef Hot Pot (Enjoy with KOMETSUYA “White egg”) – Served with Exclusive Kaiseki Dinner & Crab Kaiseki Dinner
Savor the exquisite tenderness of thick-cut Tokachi Wagyu, known for its fine texture and rich marbling. The juicy beef releases its flavor into the ingredients, while the addition of scallions enhances the distinctive taste. This dish is served with a rich, mellow broth made from our drinkable sodium carbonate spring water, adding a unique depth of flavor. It’s a signature dish at Takimotokan, affectionately known as the “Aisai Hot Pot.”


Black Rockfish Steamed Rice – Served with Deluxe Kaiseki Dinner, Exclusive Kaiseki Dinner & Crab Kaiseki Dinner
This dish features seasonal black rockfish, glazed with our special teriyaki sauce to bring out its glossy finish and rich flavor. It is then steamed with Nanatsuboshi, a premium rice from Hokkaido, right before your eyes. A unique twist on clay pot rice with a teriyaki glaze, it’s sure to provide a delightful dining experience.

The Winter Kaiseki Menu is available from December 1st to February 28th.
