Now that our Yu Festival and Water Battle are over, we are waiting for Spring to come!

Starting next month, the beautiful cherry blossoms will begin to appear in Japan. While it will take some time for the flowers in Noboribetsu to bloom, at Dai-ichi Takimotokan, we have a created a gorgeous menu for our Takimotokan Spring Festival!

Hanami Sushi (sushi prepared in the shape of various spring flowers)
Spring Cabbage and Radish Salad (mixed with chicken, diced cheese, and hearty slices of cabbage and radish topped with a carrot dressing)
Grilled Pumpkin and New Onions with Black Vinegar Dressing (the grilling brings out the wonderful umami flavor of both)
Eggs Benedict – (egg and potato salad covered with cheese and basil sauce baked in a small dish)

Sole, caught near Kushiro, seasoned with salt and sake and then steamed to seal the flavors. Served with tofu and mushrooms, it’s just the right size for two people!
