November Lunch Special: Trois Beef Stew (Tail・Tongue・Rib)

As autumn rolls out its rich carpet of color on the nearby mountainsides here in Noboribetsu Onsen, our chef has prepared a pair of special dishes that will surely warm and satisfy. Making good use of Hokkaido’s rich harvests from sea and land alike, we think you will find something special!

Trois Beef Stew (Tail・Tongue・Rib)

A rich, hearty stew made with three cuts of beef – tail, tongue, and boneless rib – slow-cooked in a flavorful tomato sauce until the meat is tender and slips from the bone. Beef tail is famous both for its toughness, and the deep flavor it offers up when made into a soup. It is also a rich source of collagen, and therefore, helpful in keeping skin beautiful as the dry, cold weather of winter arrives. Golden wedges of potato and a sprig of vivid broccoli make it possible to savor every last drop of this satisfying stew.

Served with rice or bread, soup and salad for 1,200 yen, including tax.

Crab Cream Croquette with Handmade Tartar Sauce

This homemade crab croquette is a masterful blend of sweet crab and rich cream. Fried a golden brown, the outside is crisp enough for a gentle crunch before the steamy interior bursts with this unique Hokkaido flavor. While our chef recommends the first bite be simply the croquette, the second can also be enjoyed with some of our homemade tartar sauce. Its mellow acidity balances the creamy flavor of the croquette for an unforgettable lunch. Garnished with warm vegetables simmered in consomme, it is a delightful meal for the middle of the day.

Served with soup and salad for 1,000 yen, including tax.

Spinach and Bacon Spaghetti

Emerald green leaves of spinach interwoven with strands of spaghetti and smoky chunks of bacon make this a popular dish anytime of the year. These winter greens make an especially healthy choice to satisfy any hiker in from the trail.

To further inspire you, we wanted to offer these two photos taken by one of our staff members. The weather has turned cold here in Hokkaido, and in Noboribetsu Onsen almost everyone is wearing coats and scarves. The trees, too, are showing brilliant colors. These images really capture the feeling.
