From Kaiseki restaurant Yunosato, we introduce “Saichou”, a sparkling tea from the UK, a non-alcoholic beverage recommended for those who enjoy pairing drinks with their meal.


Developed by a couple who met during their doctoral studies in food chemistry, Saicho Sparkling Tea was born out of a desire to create a drink for the wife, who is sensitive to alcohol.
This sparkling tea is crafted to enhance meals with its wine-like aroma, flavor, and mouthfeel.
The couple spent two years selecting the perfect tea leaves and 24 hours on the extraction process,
blending science and passion into every bottle. The name “Saicho” pays homage to the Buddhist monk who introduced tea culture to Japan in the year 805 (Enryaku 24),
reflecting deep respect for the history and tradition of tea.
Recognized for its quality, Saicho is served in luxury hotels and fine dining establishments around the world. Though non-alcoholic,
it offers a sophisticated pairing experience. Each bottle features a bird representing the tea’s country of origin, making it a refined gift option.

Three Flavors Available:
Darjeeling (Peacock)
Aromas of peach and orange layered with ginger and woody spices. A complex and elegant finish, perfect with grilled meats or lasagna.

Hojicha (Pheasant)
Roasted notes with hints of orange peel and hazelnut. A subtle bitterness enhances dishes, with a clean aftertaste. Pairs well with mushroom risotto or sushi.

Jasmine (Crane)
Fragrant notes of lychee, vanilla, and rose, with a refreshing finish reminiscent of Riesling Sekt. Ideal with spicy Asian-style salads.
