Special Autumn Meal Preview!
Summer is underway here in Noboribetsu Onsen, but we are excited to offer a preview of our Autumn Meals. From September 1 through the end of November, we will showcase the season’s best from Hokkaido. We think it will tempt you to visit our onsen resort this next season!
The two menus that are part of our food plan for autumn place a little bit of autumn in each dish that is as colorful as the surrounding hills themselves in that glorious season.
First, from the room food plan, the Special meal.

Mukago Shinjo Kikuhana Bekko
Mukago are the tiny potatoes or sprouts that hang from the stem of the yamaimo (mountain potato or Japanese yam) vine. About 1 cm in diameter, they look like tiny potatoes. Eaten whole and with the peel, they are rich in iron, potassium, magnesium, fiber, and are simply delicious. Served in combination with deep-fried, strained pumpkin and minced cod, they are divine. Served alongside carrots cut in the shape of the Ookanobo, it also showcases the trademark of Dai-ichi Takimotokan!

Marunasu Dengaku Fukiyose (Grilled eggplant with sweet miso paste, and colorful vegetables)
Loaded with colorful autumn ingredients such as maitake mushrooms (Hen of the Woods), chestnuts, green beans, young ginkgo nuts, and sea urchin, artfully tumble together into a round eggplant. Lively with shades of autumn, it is adorned with gingko leaves cut from sweet potato. Served with grilled Dengaku miso, a unique blend of miso, egg yolk, and Japanese pepper, it is simply unforgettable.
