2026 IDEYU Japanese cuisine Summer Limited Menu
In early summer, Hokkaido is wrapped in vibrant greenery and clear blue skies.
At Ideyu Japanese cuisine, we are pleased to introduce a limited-time menu starting June 1:
“Chilled refreshing soba serve with Hokkaido pork.”
This refreshing dish features Hokkaido pork, perfect for the warmer season.
The grated yam is made from “Nebaristar,” a yam variety genetically crossbred from nagaimo and yamatoimo, offering a smooth texture with a rich, deep flavor.
Topped with plum, grated daikon, myoga ginger, and shiso leaves, along with the gentle acidity of Hokkaido-grown tomatoes, the flavors come together beautifully—ideal for hot days or after a relaxing soak in the hot springs.
You can enjoy it either by dipping the soba into the sauce or pouring it over the noodles.
A warm dipping sauce option is also available upon request.
For a more satisfying meal, you can also pair it with a rice ball.
